Well, after three direct hits by hurricanes over the last two years
(Frances, Jeanne, Wilma) and $35,000 in repairs to our house, I finally
got my concession launched here in Port St. Lucie, Florida. I’ve only
worked small local events so far while I get up to speed. I’m sure
learning a lot and making a little money too. I tote everything around in
a 6’ x 10’ trailer. I’m towing it with my 1994 Toyota 4-cylinder pickup
with 193,000 miles, so I’m sticking to local events until I get something
a little bigger and more powerful.
Attached is a snap of the trailer packed and ready to roll and a couple
of pix of the booth, one at a daytime event at a botanical garden and one
at a nighttime street festival. So far, there hasn’t been any other
concessionaire, whether working out of a popup tent or a concession
trailer or RV that looks nearly so good, with the exception of a Maui
Wowie franchisee whose RV is pretty slick.
I’m not getting any objections at a $3 price point. I don’t think I could
go that high at these local events using paper cones instead of the drip
trays. You are right about adding fruit not being worth the trouble,
although some people will pay an extra dollar for a serving spoon’s worth
of tropical fruit salad, which I can buy in bulk at BJ’s. However I do
add a maraschino cherry. It takes just a few extra seconds, and customers
act as though I’ve handed them a gold coin. I also found a source for
plastic leis at about a dime a pop, which I give to the little kids.
Between the drip tray and the lei, once a few of the little ones have
been to the booth all the others who see them are compelled to come and
get theirs, parents in tow.
Anyway, I know I could get more business from seniors with Splenda
syrups, bt I haven’t tried the quarts of Splenda cherry and raspberry I
bought from you yet because I don’t know how to use it. Do you just add
water or do you make up simple syrup using Splenda instead of sugar? If
the latter, how much Splenda does it take to make a gallon of syrup?
Once I hear from you, I’ll be ordering some gallon containers and more
pour bottles.
Eventually, I guess I’ll have to get a cube shaver when I’m ready to
tackle major events. I will say, though, that the block shaver is a crowd
pleaser, especially when it spits out the block and I catch it in the
solar plexus. Actually that only happened a few times early on, but it
was pretty exciting when it did.
